This chili recipe is a weekly staple in our household. It is fast, easy, and simply the best chili I’ve ever eaten. After a long day at work, the last thing I want to do is spend 2 to 3 more hours cooking and cleaning up after dinner. By the time I get home at 6pm, cooking a regular dinner means I won’t be finished until at least 8pm! That is crazy! Not only is the Instant Pot a lifesaver, this recipe just knocks it out of the park.
From start to finish, this meal is a 1 pot wonder that the family enjoys time after time. It is easily scale-able. With myself and 4 children, including 3 teenage boys, I tend to make more than the average parent. You can easily scale this down by half to feed a normal family of 4! Or, keep the recipe as is and have delicious leftovers to bring to work for lunch. If you keep the recipe as is, I suggest using THIS 8 QUART INSTANT POT (affiliate link).
