My dad was my everything. He passed away in 2015 from Lung Cancer. He gave me my love of horses, cornbread and milk, and of course, Pecan Pie.

Every Thanksgiving and Christmas my dad had 1 Pecan pie all to himself. It was his absolute favorite.

Paul’s Pecan Pie

Ingredients

  • 1 ea 9" pie crust

  • 3 ea eggs beaten

  • 3 tbsp melted butter

  • ½ cup brown sugar packed

  • ¼ cup sugar

  • ½ cup light corn syrup

  • ½ cup dark corn syrup

  • 1 tsp vanilla

  • ¼ tsp salt

  • 1¼ cup pecans broken and whole

Directions

  • Chill pie crust in refrigerator
  • Preheat oven 350°
  • In medium bowl, beat eggs lightly
  • Stir in remaining ingredients.
  • Remove pie crust from refrigerator and pour mixture into pie shell.
  • Bake 45 minutes. If edges start to burn, cover edges with tin foil.
  • Remove from oven. Let cool and serve.
